Selected from high density planted vineyards on ferricrete and shale soils in one of the coolest wine growing areas of South Africa. Viticultural practices focussed on producing lower yields of concentrated fruit that express the individuality of each white grape variety and the terroir of the region.
Vinification
Grapes were hand-picked, chilled overnight and gently pressed before being naturally fermented. Matured with extended lees contact in a combination of clay amphorae and stainless-steel tanks for 10 months. The blend was assembled and matured for an additional 12 months in 500L older oak barrels to harmonise the components. Bottled with only a light fining and filtration.
Tasting Notes
Aromas of tropical fruit, citrus, fennel, honey and blossoms. Multilayered, fresh palate with a bracing acidity, balanced by well measured residual sugar. The finish is exceptionally long and focussed.
