Varietal & Analysis
Varietal: Chardonnay
Analysis: Alc. 13.0% Vol | RS 2.1 g/l | pH 3.37 | TA 6,7 g/l
Origin
Lower Duivenhoksrivier - Cape South Coast
Vineyard
Selected from a remote vineyard situated between Vermaaklikheid, Riversdale and Heidelberg. Grown on pure limestone soils within 10km of the ocean, the vines are exposed to harsh elements during the year, but the ripening period is cool and moderate. These unique elements result in fruit with depth of flavour and a distinct character.
Vinification
Grapes were hand-picked during the early morning, sorted and then destalked to press. The juice was cold settled overnight before it was racked to French oak barrels where fermentation took place over 2 weeks. The wine was bottled after a further 11 months of aging in 300L barriques, of which 25% was new oak, followed by only a light fining / filtration.
Tasting Notes
Fresh scents of green lime and pear backed up by carefully judged oaking with delicate toasted notes and richness from the extended lees contact. On the palate the distinctive salty minerality from the limestone soils is supported by citrus notes, a lovely creamy mouthfeel and well-balanced natural acidity. A delicate yet complex Chardonnay that pairs well with a wide range of food and will age beautifully.
